Default Possible to un-do welds?

Here's the problem: the shop I took my car to to have my cat and exhaust installed did some hack job on it The header is welded to the cat which is welded to the exhaust. No flanges, and I'm not even sure if they used the donut gasket for the header to cat connetion. They then proceeded to use the springbolts out back, for the axleback section, kinda like "hm what are these for? oh well, lets throw'em back here!"
I'm concerned that the welding and lack of flexibility will lead to cracks over time, especially if I take a turn hard or something, and I want to un-do the shitty welding job they did, if only to be able to resell the components in the future.
Is it possible to un-weld them and bring them back to the way they were before, so I can install it the right way (shoulda done it myself the first time, I know, I was lazy)?
