Default B18 engine problems .. over heating

95 GSr ...

my car is over heating and i don't know y ... i cant find a single problem with it

when i driving normal its ok temp but as soon as i accelerate the temp jumps up and goes almost to the H ... if i slow down or shift it out of gear then the temp drops ... then sometimes it just jumps around very fast
Ive gotten a check engine light but it turns off as soon as the car is shut off and it does it very rarely ... when the light is on there is no Vtec

HELP ME i want to go to the track tomm

these are the things i have done to it so i know its not the cause of the problem
-New head gasket (done right)
-milled head just to make sure its straight
-new thermostat

fans turn on perfectly
