Datalogging hardware.
I'm sure most places that sell "data acquisition" equipment will have the sensors you're looking for, to compliment their datalogger product.

radio shack will have a linear pot. it will depend on how you will wire it to get it to work properly. i didnt get a chance to fully play around with the datalogger i had setup, but it seemed to work fine, until something happened with the wiring i didnt fix and havent bothered with since.

The trick, I believe, is to get a regular pot and rig up a rack and pinion type machanism to move with the pedal or whatever you're tracking.

Yes, I believe this is what he was getting at. Because a linear pot itself is not an unusal item. I might consider looking into DIY robotics catalogs to source these.

Edit: they may not have pots (I have been looking there for thermocouples), but their stuff is WAY better than the "automotive grade" crap, which apparently is just that...crap.

Take a "regular" reasonable precision pot, spring load it towards one stop, put a spool on the shaft with a known diameter, thread a thin aircraft type stainless steel cable of 1/16 inch diameter on the spool, and wala..... you have a "digital pot". These can often be installed more easily than a 4" linear pot.
