Default thermostat 180 degree vs. 192 degree

I have a 95 integra ls. I want to change the thermostat but the shop carries different kinds. they have a 180 degree thats oe spec and a high temp 192 degree one. does anyone know why there is a high temp one

high temp one is for colder climates. it wont open until the engine coolant reaches 192*.
