I've never seen one below 160 or above 165 stock....they're usually within that range 95% of the time...

Correct. Most ITR's are laying down 160-165whp. You might see a freak motor that is a bit over 165.
You should concentrate on the horsepower and torque curves rather than a peak number. Power-to-weight ratios are critical too, as is gearing.
