Thicker head gasket to lower compression to desired level?

Here is my dilema. Shelf stock CP pistons come in 12.2:1 (12.5 on a GSR head as listed), but I had an earlier issue with my head after my valve job and have reason to believe that it was shaved more than it should have been, also once I get my head ported it will be resurfaced once again (although hopefully minimally this time
) removing more material. Depending on how much as actually been shaved I could very well see my compression bumped back up to around 12.5 if not more, which isn't really where I would like it. I don't plan on running big cams (Skunk stage ones currently) and even if I upgrade to something more aggressive I like staying on the safe side when it comes to tuning forgiveness and piston to valve clearance. I would prefer to stay around 11.8-12.2 if possible.
I know cometic makes thicker head gaskets for boosted applications. Is there any reason they wouldn't be suited to a high rpm all motor setup for the same purpose? Thanks in advance.
