No, they don't. The VFR800 does, but it's not the same VTEC as Honda uses in cars. All it does is use 2 valves per cylinder below 7k rpm, and 4 above.

I'd say get it - if you have the skills or can aquire them, and can hold off on too much craziness until you do.
I've ridden most of the bikes Honda has made since the 80's. I've owned CBR 600 F1, F2, and two 900RRs. They are excellent bikes. Reliable, and very capable, both on the street, and on the track. Easy to ride fast. Reasonable maintenance level for a high end sportbike.
At 10/10ths on the track, you will feel the frame flex a bit. However the chassis is much more supple, fogiving, and comfortable. Say compared to a GSXR, that can outperform on the track by a little bit. The seating positon is racy enough, but is tons more comfortable on the street (than Jixer, R1), especially after 3-6 hours
If you can get wholesale, and the bike is low miles and in good shape (definitely if it's a Harley trade in!), don't even mess with 600 (slow), R1 ($$$), Jix ($$, uncomfortable for sport touring).
Don't get me wrong, the CBR 600 is a great bike. Relatively fast and cheap (bike, insurance). But once you have some skills, you would never go back to the 6 from the 9. It's like the difference between a GSR and an ITR. Yum
