its amazing how much tuning makes a difference in a built motor . making sure that everything runs right .
tuning is always a must

I would just put a new R engine back in. The s2000 engine wont give you a whole lot more performance over the R engine. When you consider that many skilled drivers have kept up with the S2000 in their R.
if you've got the money and the time, anything can be done
case in point....someone transplanted an f20c into and AE86
I've also seen a rotary engine in a AE86
and just recently, saw a Nissan Twin-turbo v-6 motor (possibly a the Fairlady Z) put into a Masarati.
All setups cost in the $60,000 range to fabricate and build

C'mon now, you're answering your own questions. It blew up because of your builders and you know tuning is important. Get a new builder and tune it properly. It won't be anywhere near as unique as the S2000 engine swapped in (is that the F20C?), but if you're just using it for racing, who cars? It'll be way cheaper, easier, less-time consuming to just build a good B18C5.

Not to defend this guy but Apex'i markets their turbo timer as an Auto Timer. Basically its mainly a Air/Fuel Ration monitor but it has turbo timer functions. They advertise it for both N/A and F/I vehicles.
ITR motors are horizontally mounted, S2K motors are transversely mounted and rear wheel drive. Unless they make an adapater to mount a S2K motor to a B series or D series trans its not going to happen.
The amount of money to mod your car to be able to use the S2K motor will be like more than buying 2 ITR motors. BTW spoon products are a waste of money, if you want to have a fast straight line car, choose another companies products. Hell spoon doesn't even make most of their parts, they outsource everything. I look at their products as slightly better OEM parts, thats all.

Any A/F meter that uses the stock sensor is completely useless

It would cost big big BIG BIG money.
You just can't throw it in, the entire engine bay and a good deal of the underside of the car would have to be completely reworked, all custom, all big money.
What's the point? There are plenty of other big power-making, viable options.
