Default Do I need to take any special precautions with my new setup?

I'm assembling this motor this month, and I want to know with the parts I have are their any special precautions I need to take? Such as:

1) Piston-to-valve clearance's? Do I need to clay the motor, or should it be fine?

2) Should I shoot for .12-.13 factory piston-to-wall clearance?

3) What about valve-to-valve clearances with my big cams? How do I make sure everything will run right? What should or shouldn't I worry about?

4) Install height on the valvesprings?

5) Should I run factory ring gaps, or what JE reccomends? or any other gaps??

6) Also I have my choice of a JG Victor-X or a Skunk2..which one will be best? Is my setup big enough to justify a JG?

7) Someone told me that GE blocks need to have some additive added to the cooling system to stop them from leaking? Is this true? If so what do I need to buy?

I'm clueless when it comes to building motors, I just want to make sure that I have nothing to worry about. Also I'm not running adj. cam gears for safety sake.
