What would be the longest size that I could get away with on my EH2?

for the exhaust, you mean? You can make it as long as the piping will allow. You just have to make sure it's not so tall that it hits the under carriage of the car.

I used a 22in magnaflow 2.5in in/out. Fit fine and coupled with 2.5 piping, 2.5 carsound and a 2.5 es oval style magnaflow muffler sounds nice and deep.
