whats the largest bore you can run on stock b series head?

You bore the block, not the head.

You deshroud the head to align with the bore on the block

how do you do that? i plan on running atleast an 84mm bore with the GE sleeves

A speed shop needs to do that. Dont get out your dremel tool and try to do it yourself.
