Double-clutching isn't really necessary anymore due to the introduction on sycros (yes, my spelling sucks). But, the concept behind double-clutching was hitting the clutch twice to bring the tranny and the motor close to the same speed so they would engage more smoothly and power wouldn't be lost in the shift. My definition is very general, simply because I don't feel like typing a whole lot. Just do a Google search for double clutching and you should find what you need. But, like I said, it isn't really necessary anymore.
As for heel-toe this article should help you out (again, I don't feel like typing).

Double clutching = In gear, foot off clutch > clutch in > shift to neutral >come off clutch > clutch in, shift to next gear.
This is my understanding of double clutching. It makes it easier on your synchros buy matching the input shaft speed to the gear??? or something like that. I'll stop here and let somebody else go into detail on that one.
