How to change rear brake pads?
I often change the front pads and it's piece of cake! One nut takes care of it.
But today, I was trying to change the rear one (00' Teg GS). After taken down the bolt, I can't pull it off, even if I take of the bolt on top that it remains firm. I see this black metal piece attach behind it with two nuts, do I have to take it off first?

Yes, you have to take of the black dust shield with the two 10mm bolts. You also need to turn the caliper piston using a special tool or just a screw driver to push it in. I forget which way clockwise or counterclockwise...you could probably find the way if you do a search

Don't remove the dust shield. I've replaced mine twice, and I've never removed the dust shield to do brake pads. As mentioned above, be sure to release the parking brake, though. Sometimes it helps to slightly loosen the other bolt (typically upper, if you've already removed the lower one). Then, as in the front, the caliper should swivel upward, allowing access to the pads, etc.

Also, I dunno what was wrong with me or it's been a while that I get down there...I mistaken the 14 mm bolt above the 12mm and took it out, puddles of brake oil came out. I put it back, drove it around and don't seem to have any mushy feeling to the brake. Thank god I didn't mistaken the bleeder bolt.

first pads on the car? if not it could be the anti squeel that has it stuck. happend to me, there was too mush and i had to pull on it hard.
The reason changing is, there is this annoying grinding sound whenever I'm on the brake. I check the wheel lugs and spray the brake disc and it seems to be from the pads.
