Default Dyno tuning?

When you take your car to the dyno shop, do they adjust it to an a/f ratio of 14.7 or so? (If they have a wideband O2 sensor) Does that produce the optimum wheel HP? I heard that running a little on the lean side produces more HP???

Where they set the air to fuel ratio will depend on your car. And yes running a little lean does produce more hp, but it's only done to a safe level.
