When finished racing, do you guys normally let the engine idle for a couple minutes, or do you shut it off immediately? I heard this thing before, that its good for the motor to let it idle a few minutes. Like it lets the oil and stuff to circulate awhile after extreme driving. Or does this only benefit turbo equipped cars??????

Yes, the suggested time is 60 seconds. Same goes for long highway trips.
