3rd gear grinding every now and then
When I start moving it goes into 2nd fine and then I have to let the rpms drop for multiple seconds and slowly put it in 3rd or else it grinds like crazy. (Clutch all the way in) and then 4th and 5th are fine.

It could be the synchro is worn or the dog teeth are rounded off on the gear itself or the teeth in the slider sleeve are worn pretty bad.
If the clutch is fully dis-engaging, it could be just the synchro is worn, not slowing the gear down enough to allow the sleeve to lock onto the gear safely without grinding.
You can test for full dis-engagement of the clutch simply by driving slow in first gear holding a steady throttle and then push in your clutch without releasing the gas pedal. Your car should start slowing down as the revs stay the same. If not, try putting a bit more tension on the cable by tightening the adjuster nut.
As long as your getting full release of the clutch then most likely the problem is inside the transmission.
A worn out clutch would not cause the grinding of gears, it would just slip as you give it throttle. RPM would go up but vehicle speed is not accellerating..
A manual tranny is not hard to take apart and replace the worn components if you have the tools, time and space to do it.
Synchrotec offers pretty good rebuild kits.
There are plenty of videos showing how to take one apart.
