Default '96 Integra LS temp issues

Okay, soo.....
I just had a guy do a head gasket replacement on my integra and he messed up a lot of important things. The head gasket blew right after he had finished it the first time, so i bought a whole new gasket kit and he re-did it). He also installed a new water pump too...
The car then over heated majorly a couple days later and ended up blowing off the thermostat bypass hose. Like, the hose clamp and the end of the hose was still on the thermostat housing but the rest of the hose ripped off of it. I had to fix a lot of the work he did and so far, I've replaced the fuel injectors, spark plugs and wires, replaced thermostat and flushed the radiator (yesterday), adjusted the timing several times, adjusted the valves several times, replaced the MAP sensor and the crankshaft position sensor (as well as had to solder the connector wires for it back together)....that's all I can think of right now...but, I did all that, and before I replaced the thermostat, the temp gauge wasn't getting up to operating temp and my heater was blowing luke warm air but the car wasn't overheating. Turns out the thermostat was stuck open... so I replaced it. Also, the cooling fan hasn't been turning on so I put a jumper wire in where the relay goes and so the fan just stays on..
And NOW, my car is driving fine and starting up fine BUT I just drove home from work and everything was cool until I noticed that I had poor acceleration. The temp gauge stayed at operating temp and the heater was blowing hot air but when I smelled coolant I pulled over and checked under the hood. The tapping noise (my guess is that I need to adjust the valves again?) was louder than before. Weird. And then I got home and turned off the car and heard squealing coming from the engine...which was pressure trying to escape from the thermostat side of the bottom coolant hose....I'm confused. What have I missed or done wrong??? Can anybody help me figure this out?
