Default Coolant System Questions 2000 CR-V

Hey guys. After several toyotas this is my first Honda purchase and would love some advice. Just bought a 2000 5 speed Crv. Almost positive i didnt buy a lemon but i am having some strange problems with the coolant system. Which i usually end up dealing with a thousand times more then anything else in every car ive owned. Ive just recently noticed that the temp gauge is kind of all over the place. Never gets even close to critical but will reach optimal temp right in the middle then drop down to the very bottom or in between at random times for no apparent reason. As well my radiator fan only kicks on when the ac is on no matter how long the car has been running. All the while the car is definitely not over heating or leaking anything at all, even on long test drives, which is what i find strange as ive seen my toyotas overheat just from looking at them the wrong way. Any ideas? Fuses are fine, upper and lower radiator hoses get hot enough after a normal amount of time so i assume thermostat is fine. Could a bad coolant temp sensor cause this? I plan or replacing it if its a possible culprit but its like whoever designed this car purposefully made it impossible to get any clear access or leverage on the damn thing without removing half the **** under the hood to get some room. Regardless any help or ideas would be greatly appreciated. Ive spent countless hours yelling and swearing at my previous cars coolant system problems untill i just ended up replacing literally everything and id like to avoid that this time around. Thanks!
