Default Ideal ride height for street/ track ?

Ok. What's is the deal with everyone slamming their cars for track days? I know lowering the car has benefits for performance, but why so low? I have my Vx corner weighed and lowered about 2 inches in the front and same in the rear. I have it set so the suspension geometry is in a neutral state without binding. All arms, links, and components have equal/ maximum compression and droop. Am I missing something?

Here is my car. It looks like it has a reverse rake look but the actual rear quarter panel sits lower than the front. The car is corner weighed as well with 195/50/15 15x7 (forgot offset).
