'01 2.3 Not Starting After Refuel?
To be clear the car was running fine prior to arriving at the gas station, correct? You turned it off and then didn't start?
What does not starting mean?
When you turn the switch just a click, engine turns over but doesn't start?
if the engine turns over suspect bad fuel (water in tank). Or you accidentally got diesel fuel.

could be a bad fuel pump/relay or ground. the battey and engine grounds have a BIG impact on starting the car. u can test the fuel pressure and the battery charging system (youtube.com). if ur voltage drops low while the car is running upgrade the grounds. this is a common on ALL cars if u have aftermarket stereo equiptment. if u have 0% fuel pressure then replace fuel pump. 01 Accords have a fuel pump repair hole in the trunk
Sounds like it does start at some point - the way you post is worded it sounds like this happens often. Car running and normal op temp, shut it off for just a few minutes (re-fill gas), try to start and it won't run.

So what happens is, I pull into the gas station, normal temperature, shut it off, get gas, and when I go to start it again, it cranks, and almost starts but it doesnèt. You have to keep cranking for about 30 seconds and then it starts, and you have to pump the gas the whole time, then you have to rev it kinda high to keep it going, but once you're driving for about a minute it's fine. Do you understand me?
Hook up a fuel pressure tester and lay the hood on it gently with the gauge facing the windshield so you can view it when starting the car and see whats happening to fuel pressure. You can get a kit from Harbor Freight for $20

Probably due to a stuck open EVAP canister purge valve. When fuel evaporates inside the gas tank, the excess fuel vapors are transferred to the charcoal canister. The fuel vapors are stored there until they can safely be transferred back to the engine to be burned with the normal air-fuel mixture.
If it stuck open during refueling, even more fuel vapors are allowed to enter the intake manifold. Your car becomes flooded. Pressing the accelerator pedal gets the car to start from the flooded situation.
In other words, the way the EVAP purge valve suppose to operate is to open while driving, so the engine can suck/purge fuel vapors out of the charcoal canister and use that to be burned with the normal air-fuel mixture.
