It all really depends on how clean the car is and how attached to it he is. I'm planning on doing an auto to manual conversion on my car but it's a granny fresh 91' with under 100k miles on it.

There is a how to guide in there.
The auto to manual swap is not difficult its is pretty much straight forward as replacing a clutch with a little but of wiring. The pedals is tricky but as long as you drop the column you should be ok.

It's real easy. It only took me and my buddy 4 hours to do it all

Its a straight forward swap, i dont know what tranny your looking at to do a hydro swap or why you would want to go out of your way to convert to a hydro setup unless the tranny calls for it, but if you end up putting a cable trans in it follow the instructions oh how to adjust your clutch, any idiot can bolt a trans in, but im usually fixing a customers car because they set the clutch cable too tight and burned it up. just a word of caution, best of luck

pretty much bolt-in, better off running a cable clutch assembly and buying the conversion kit online to connect a hydro to the cable, if you try to run a hydro clutch it will be ALOT harder.

conversion kit just bolts on the front of the tranny and your cable connects to it instead of running lines and a MC from the pedal
