How hard is it to change a thermostat and/or coolant temp. sensor?

My car is overheating...I already put in a brand new radiator after my old one sprung a leak at a track event. A month later, my temp gauge began fluctuating. I wasn't sure if it was a bad thermo, as the upper and lower radiator hoses were the same temperature.
Interestingly, the temp gauge moves up if I close the sunroof on my Civic...
Anyways, I'm pretty sure my fluctuating temperature is from either the temp sensor or thermo. The thermo is the original, 8 years old/165,000miles.

both pretty easy, you will be playing with coolant though, which is dangerous...
maybe 1-5 hours depending on your skills...
go with teh temp sensor 1st, then the thremostat...

Hmmm...you know what...I can't remember. Should I take the rad cap off, and wait for the bubbles to come out, then add more coolant? Or should I just drain everything off, and add a fresh supply?
