No power steering ?
There is much more effort needed with the belt removed on a PS equipped car than there is with a manual rack. When you remove the belt the pressurized fluid that normally aids your input must now be "pumped" by your input. To "convert" a PS rack to manual you must "loop" the rack. Primarily this involves physically looping the two sides of the rack cylinder together to create a closed circuit, adding a breather (and maybe a small fluid resevoir) to maintain a foam free fluid level, and on certain models removal of some valving in the rack.
removing the belt is simple, but the results in my opinion are mediocre.
