Default temp gauge going up & down

Its been acting crazy. When I drive for a while it goes up all the way like its over heating but its not. I checked all fuses n got a new mpfi harness done n a new temperature fan sensor. What else should I check? Its been doing for a yr but its getting worst making my fan go on the whole time plus I checked my hoses there routed correctly.

Well the ecu n dizzy ones r new since its a new harness but the others seem fine to me. U know of a shop that can check it out for me locally? Even sometimes the gas one gets a lil fishy but rare.

Also, double check to make sure you have no air in the coolant system.

I had that issue on my 91 sedan, I had a coolant leak on the collant resevoir, I fixed it and it kept on, I blow my waterpu.mp after a 90 minute straight, 70mph drive, I got it fixed, and it kept doing that to me, in my case it was my head gasket that had a small crack and it was leaking coolant into the engine. Check your compression to be safe, but then again my case was just a bad experience cuz then engine would get warmer than normal, in my case it was slightly overheating,
