#1 yes you should bleed your system
#2 you should NEVER lose any coolant so you do either have a leak or youre burning it somewhere
#3 you should be using 50/50 coolant so your water pump gets properly lubricated and rust doesnt form or if you dont care, just put in distilled water, not drinking nor tap water
it sounds to me like you have air in your system. it should not go up and down. the needle should stay just under the halway point after warming up
using water doesnt mean your car is running hotter, it should run around the same temp. do a pressure test and possibly a leakdown if you can

on the side of my radiator, it poped open, i noticed that,it has like a weird waffle looking screen right there, one time my car was getting hot i noticed watering squirting out for a second then stoped took it to the shop the guy recommend i should get my main fan hooked up since i had the a.c fan, i know i should have my fans hooked up right but i pefer running with a fan on, anyway he said its bad but drivable but since i hooked up my main fan its been fine! i dont know why since that day it got hot and noticed i had nothing in my radiator filled it up with water and now it gets hotter then usual not even passed the middle just not normal

on the side of my radiator, if ur looking down at it, it looks like it POPED OPEN, seriously 1990 integra radiator , like their used to be somthing holding it together, its not cracked SORRY IF MY LONG *** setence CONFUSED U.

It has nothing to do with your run-on sentence, it's just that you've done an extremely poor job of describing the exact nature of your problem. And that makes it difficult to help you.
