Get some SS polish from your local hardware store. Make sure you wipe the header clean of oil/grease before firing up the car and the uneven discoloration should not come back.

Depending on the header, SS headers will discolor to a bronze or purple-lish color.

Mine has uneven discoloration, but I don't care.

I think all metal polishes are about the same, its just how much elbow grease you put into the polishing that counts most.

But i use Mothers and wenol,my personal prefferance

I wouldn't recommend steel wool. Since you can comtaminate the stainless with the carbon steel from the steel wool and it could lead to rusting of the steel wool that is left behind.

Use alcohol to wipe the header down after you clean/polish it.
Be sure not to touch it with your hands or anything oily.

Mothers aluminum and mag polish works well, i also use 2000 grit sand paper to get rust and crud off.
