Default Temperature guage question?

so i just got my swap done and i just noticed my temp guage takes a while to heat up but it does reach operating temperature 1/3 of guage but does not stay there it goes down and comes back to 1/3. i also noticed that my heat is not what it used to be. i'm pretty sure it's the thermostat stuck open but any suggestions on what else it could be. also i did replace a coolant hose because of a leak the hose was the one from the head to valve. and i did bleed the coolant system. i would like to add the car is running good no CEL but i do feel like its going through gas pretty quick. im planning on replacing the thermostat and radiator cap lmk what you think.

I would start with that. Replace thermostat and cap. make sure to turn your heater to full hot while it runs until normal temperature. just to make sure you get all air bubbles out.

Thermostat partially stuck open. The temp gauge probably wouldn't move much off of cold at all if it was fully stuck open. Mine was completely stuck open and my temp gauge never moved until I replaced it.

This is defiantly a thermostat issue. When mine was stuck open it would get hot and then drop soon as i drive, heat? there was none haha. So change that and the gasket and 99.9% sure your problem is fixed!
