stainless - lasts longer
ceramic - better performance (heat resistant properties)
looks department is purely personal preference. I actually like how the DC ceramic headers look versus the SS.

he only has one header but he is asking about 2 differant headers, the SS and the ceramic. So, maybe it's ok to say headers.

When it comes to DC, definately just get ceramic. Their stainless steel coating is not the best of quality and not worth the extra money.
