While my motor is out, what are some things that i should replace like the most important to least important. Im guessing some things are...

oil pump

water pump, tbelt, oil pan gasket, headgasket, valve cover gasket. Those are a few that I would do, all of those can be done with the engine in the car though. How many miles are on your engine?

I would just inspect it, put new spark plugs and fluids in it and run the thing then. That is not very many miles. You may wanna consider doing a Tbelt though just for piece of mind.

Your reasoning behind this?

I think it is a waste of money. I use to run synthetic, until I got broke, and started to use regular oil. I didn't notice a change in performance at all. Seemed like it ran better.(probably) But as I was spending all that money on synthetic oils, my car ran just as good on syn. than regular oils. IMO

Depends if the motor being out means you're taking it apart and if so, how much. If you're not taking the head off anyway, having the motor out won't necessarily help with changing the HG. You could leave the timing belt on since the only step in that process you have to perform when pulling the motor is disconnecting the mount. Taking the motor out whole will open up the clutch & flywheel if MT. You leaving the tranny in? Post how far you're planning on disassembling the engine and get a set of all new coolant hoses.
