Will a 205/40/16 tire fit on an 8 inch wide wheel without having that terrible looking stretch?
Thanks in advance.
Also can anyone point me in a good direction for 4x114 to 4x100 adapters please

Most 205/40-16 tires are approved for wheels 7.0-8.0 inches wide, so it can be mounted on a 16x8. However, since it's the high end of the approved range, it is more likely to look stretched. The actual look may depend on the tire, since different tires (even ones labeled as the same size) can have slightly different dimensions and shapes.
Also, I'll assume you know this is definitely a 16x8 wheel (it's marked as 16x8). Some people don't realize that the wheel width (such as 16x8) is measured at the bead (where the inside edge of the tire sits) and mistakenly measure wheel width from the edge of one outer lip to the edge of the other, which is usually about an inch wider than measuring at the bead.
