Remove your battery and the battery tray. Then you can just undo the lines properly.

You can cut the lines if you need, It will not hurt anything unless you plan to reinstall it at some point. No need to plug the lines. If you want to do it right you'll need to remove the dash to extract the evap core. Will save you a few pounds and be cleaner. They sell a rubber plug to plug the hole where the evap lines protrude from the firewall.

You'll also want to get the plastic air duct that takes the place of the evaporator on non-A/C models. And in addition to the oval-shaped firewall plug already mentioned, you'll want the smaller, circular-shaped firewall plug for the evaporator drain hose.

Go to a junkyard and just snag the two plugs. They are factory installed in any car without AC. Just push the top down and pull it out.

All the lines are easy to take out. The ones through the firewall just bolt in. It's easy. If you're never going to put AC back in, gut the evaporator box or just leave it.
