What I've seen with tuning my engines is that a restriction in the exhaust usually makes it run rich. Running rich would make it less likely to detonate. So I don't see how plugging up the exhaust would make it detonate unless you did something to the tune to make it run lean or advance the ignition timing too much.
Post up the air/fuel datalog and the timing maps with general engine setup and that would be useful for determining why you're detonating.

OP, find another tuner/mechanic if yours couldn't figure that out.
True, who knows the full story, it seems like something is always going wrong with this guy's build. I have no idea why he would claim an action clutch stage 6 would only last 6-8 months, and why a CC stage 2 is not adequate for his setup.
The back pressure could cause hot exhaust gases to not get purged from the combustion chamber on overlap which could increase combustion chamber temps. You really should check back pressure, though. If it's just a few psi then it is not likely causing it. Stock cats usually flow decent up to a point. The restriction is usually going to show up at higher loads/rpm.
