Make a template using some cardboard and either buy the sheetmetal yourself, or find a shop that does one-offs if you can't find one and really need one.

Otherwise I'd just wrap them or get them ceramic coated.

Not very good when used on a daily. All that heat under the exhaust wrap between the manifold material turns to steam and thus leaves moisture, which will cause rusting.

I've read this many times, yet the mild steel header on my Spitfire has been wrapped for 16 years now (when I replaced the rusting cast iron manifold with a 4-1 header), and shows no signs of rust. The rustoleum "high temp" flat black paint I used is in much better shape in the areas that are covered by the wrap, compared to the exposed parts. Header was purchased uncoated.

I only wrapped it because the header is 1/2" from the oil pan and 1" under the intake manifold (stupid non-crossflow head), and I was worried about heat.

My personal experience, and only a singular experience. Maybe I just got lucky.
