what should water tempature be in degrees?
I just installed a water temp gauge, and it fluctuates between 150 degrees and 180 sometimes. Is this normal to see it fluctuate sometimes 30 degrees up and down?

well first off let me say that its a shitty brand, really ****. but my brother installed it. whom is a mechanic. The sensor that came with the gauge (prong i believe) was wayy too long, so we had to screw on multiple adapters to lengthen it until only the tip of the prong was inside the sensor hole. Dont know if that has to do with it.
I drove today and as im driving it stays at about 150-160, when i stop it goes up to 180 sometimes, hot days. but never so hot that the fan turns on. the fan rarely turns on, even on hot days. This is why im asking what temp the car should be. i heard that over 190 is when the fan turns on, and iv yet to see the gauge in that range so it never over heats, it almost underheats lol

The rad fan will turn on when engine coolant temp. reaches about 194 degrees F.
It is normal for engine temp. to drop when moving and increase when stopped.
If rad fan, "the fan rarely turns on" and overheating is not an issue then you have a properly working engine cooling system and by the sounds of it an efficient one. 94
