Need Help with thermostat
Did you get a lower temp thermostat? If you would install a very low temp thermostat it wouldn't allow the motor to get to a high enough temp to move far off the C on the gauge.

If it was stuck shut, wouldn't the problem be overheating rather than staying to cool, since the coolant wouldn't be flowing through the motor? Maybe it could be stuck open though and always allowing coolant to flow.
a good way to check, is to take it out and put it in a pot of water, heat it on the stove, and iff it goes CLICK!! then you havea working thermo. If yours is working properly and your temp needle still stays put then idk..
Did you forget to plug the sensor back in? just thought i would check the obvious so you dont have to go through the hassle of taking it out and rebleeding the system
