newbie question: why do most all out race cars mount the motor tilted forward so far?? does this effect shift linkage?? does the plate between motor and tranny allow for tranny to be mounted stock and motor tilted?? thanks

Beer??? You mean Ensure?? hahaha Just kidding Joe. You better get that thing running this year. TNT is 3 1/2 months away. If everyone including me would stop calling him and leave him alone, maybe that thing will be done to compete this year.
But remember Joe, you gotta go through the traps on the wheels, not the roof! LOL

The tilt moves the center of the mass forward for more weight in front of the axles, increase in traction.
The tranny mounts in it's normal location on the block.
The plate helps limit the movement in the drivetrain. See rota92's "HotRod thread on page 33 for a current disscussion on the topic.
The shift linkage, I haven't worked this out in my head yet, but it's been done before so it must work. May be someone with more knowledge then me can explain that one. I know you want as little movement as possible in the drivetrain when shifting. I learned that back in the 1970's, that's just common sense.

just use Long **** linkage or T1, you make the rod chromolt tubing the length you need
