Default Problem, need help

It's probraly a general problem but I don't feel like going to a Mechanic shop to have them fix it when I can just do it myself.

My roommate has a Honda Civic EX, I believe it's a 95 or 96. When driving just for a short while, the temperature will skyrocket but no smoke will show or anything. If you continue to drive it, the car will shut off and won't start again till the temperature drops to Cold. I open the radiator and pour in water to cool down the engine and it sputters as if the Radiator is bad. The last owner said a sensor was what needed to be replaced and it wouldn't overheat. Again it doesn't react as if the car is overheating till the gauge goes wacky.

Sorry, yeah I have a 2003 Honda Civic, forgot I put it in here lol.

Thats what the last owner said. I just wanted to double check. It's not too hard to replace the Thermostat right?
