Default bad water pump?

Okay for some reason the thermostat seems like it never opens i change it 3 times and i think its causing the car to over heat on long trips.

check if your fan turns on when it gets hot. if it doesnt turn on, check your fan motor or fan switch!

and you said your fan turns on... hmm unless you install the thermostat wrong? i know if the pump is bad it would leak... from what i experience.
i know if the hose gets hard the fan should turn on and the temp. should drop. but in your situation it might be your pump. have a mechanic check it.

Take you radiator cap off and turn on the car...let it idle like that for a while. The only time I've had that happen is when something is restricting water flow or I still have an air bubble.
