The only time you should change it is if you're on a dyno anyway.
As for if you're going to "hit" anything with it set at stock levels?
No. If you have stock cams, and stock everything else (which you've failed to tell us, but I'm assuming since you don't mention it) then .002 won't do anything.

yeah! i just got my cam gear and since i milled my head .020 i should change my cam setting but i don't know how much on the intake side and exhaust side
