Use a plastic scraper to get the big chunks off. Then use a solvent like lacquer thinner or gasoline (hazardous) or diesel fuel (less hazardous). I've also used this stuff called B12 Chemtool, it's just a bunch of gnarly solvents.
If you are really opposed to hazardous solvents, try that orange based stuff. It works Ok, not quite as good as trichloroethylene, but then again it won't cause liver damage either.
Same think goes for the carbon buildup. Scrape away with something that won't damage the metal. Then use a strong solvent and a rag. Good luck with the carbon buildup. The stuff is hard to get down to the bare metal.
I used scotch brite and solvent in the combustion chamber. Don't damage the valve seats if the valves have been removed.
The piston tops are hard to get mirror clean if they are still in the engine.
Wear some gloves or something when using the solvents. You absorb the stuff through your skin.

If you are doing a rebuild, then you are going to have your block at a machine shop to get honed (or bored depending on your build) and they are going to check the block for warpage and deck it until it is straight. Your head should also be going to a machine shop for a minimum of a valve job, and again it will be inspected for waprage and milled to make it straight as well. Take your parts to a quality machine shop so the profilometer readings are within spec for mls head gaskets. Also remember, that when decking an milling the block and head, your compression will increase and as a result you may need a thicker head gasket.
