im picking up a set of 2 piston ssbc rotors + calipers, is there any way i can run under a 17" rim with these?

You can get kits like the Fastbrake 4-piston Willwood that will fit under a 40+ (or lower) offset 15" wheel, even fits under some 14" drag wheels.

The best way to fit smaller wheels on bigger brakes is getting lower offset wheels (or adding spacers).
