I'm going to have to go with that they don't stand for any set of words. If they really meant what is stated above, why call the same car different names in different countries (EX, Si; Si, VTi, SiR; etc.)?

It actually stands for Sport Injection. Back in 1985 (and 86 for some models), the only way to get fuel injection on a Honda was to get an Si model, ie: Prelude 2.0Si, CRX Si, Civic Si, (Or LX-i for the Accords). That changed in the late 80s but Si still stands for Sport Injection.
EX doesn't stand for anything. It's simply a trim level with more **** on it than the CX, VX, DX and LX models.

Every car has trims, Corolla DX, Tercel CE, think there's a "DE" somewhere in there - they're just trim codes.
On the flip side:
