Cut Radio Harness!!!
I bought a car that was broken into, and thieves cut the radio harness.
and I have no idea what wires are what. I got a new head unit to put in

No, that's not okay.
The proper way would be to purchase the replacement harness for your vehicle, and install it using the appropriate connectors.
However, you can "hardwire" the deck, but you won't be cutting anything off. You need the connector to plug into your new radio.
To do this, you can "twist" the wires together, but it doesn't end there. They also need to be soldered & heatshrinked (or taped).
Or, you can use butt connectors or crimp-caps. NO WIRE NUTS!!

Start by cutting the stock radio harness leads to equal lengths, [as long as possible] strip 1/4"-3/8" of insulation off each lead, twist the copper strands tightly together, [twist in the same direction as they are already twisted].
Cut the HU harness down so when connected to radio harness the plug will come out of the dash no more the 2" on the side that it plugs into the HU, [do not cut off any fuses, line chokes] strip 1/4"-3/8" of insulation off all the leads and twist copper strands together, crimp butt connectors to each lead on the HU harness, give them a tug to make sure they are tight, [make sure the split in the butt connector is not at the edge of the crimp].
One by one crimp the the HU harness to the radio harness after you have confirmed you have the correct wire.

the way i have done this is go to a local junk yard and cut there harness long enough then either sauder or use butt connectors then you will have the factory plug
