cf is used to make lighter and flexible parts, kevlar is used to strenghten something, or resist heavy bangs.. for instance, to cover the outside floor of racing all-terrain vehicles. kevlar is heavier and not as flexible as cf.
the UV discoloration depends on the resins used on the cf or kevlar. epoxies are cheap and become weak with the years, but you have the bling bling factor, there are better resins that resist alot more to UVs but not so shinny.

for what application? I've only played with carbon fiber, and it all depends on how many layers you use and what shape it's in....real CF (not the bling stuff you see on dash kits) is strong as hell, light as hell, and rigid as hell.
I understood CF to be the more rigid of the two.
Kevlar is impact resistant, CF is not.
And yes, it all depends on the resin/epoxies used and the curing process.
