What do you do with the VIN on a junkyard dashboard?

If you get a dashboard from a junkyard or from a someone off the internet parting their car out. What do you do with the VIN?
I purchased mine locally when i got home I ran the VIN, car checked out fine.
Keep the VIN or replace it with mine from the car?

i opted to leave the dash vin from a swap one time and a ball busting state trooper really gave me a hard time about it. in NY your vin is printed right on the sticker of the windshield, so she compared it to the one on the dash plate and found it inconsistent.
i had to have her verify with the one in the doorjam.
now i try to make sure they match just so they don't get their **** all hard that they caught a car thief, or whatever they think.

I thought it is illegal to tamper with VINs thats why i'm curious.
haha now i can feel like a badass by breaking the law since i opted to put my VIN on there :D
