i have nardi wheel with an R-gear quick release.

What hub can I use to mount the steering wheel. Can i use a standard momo hub to mount to the quick release?

Also, does anyone have any pics of a regular hub mounted with a quick release compared to a short hub with the release. Curious as to how far out the wheel comes?

it's going to stick out a lot, probably a good 6 inches with the momo hub and your quick release.

I'd get a NRG short hub. Cuts it down to stock proportions.
