I thought the the last numbers on the tech sheet were best RPM range

If you're talking about the torque as 91@2000, that's saying peak torque is 91 lb-ft at 2000 RPMs.
For you car, max torque is 104 lb-ft at 5400 RPMs.
Yes, torque is essentially the force the engine puts out. Horsepower is (Torque x RPMs) / 5252
