A good valve job is essential for any serious build. However, stock valves are perfectly fine for 99% on H-T and will not need to be replaced.

Wait till you have an old valve break, and fall into the cylinder. I bet your opinion will change. Valves, along with retainers and keepers should be replaced if the parts are old. They take a lot of abuse, and will get frail.
I'd suggest new oem or some supertechs.

a nice port match would work perfect. you dont need oversize valves or anything like that. if you wanted you could get a whole supertech valvetrain for around 550 with high compression valves. and you will be a lot safer running at those higher rpms. if you got the whole engine apart you might as well change and do it once.
The problem with higher compression valves is that they have more mass (to reduce the combustion chamber volume). This translates to more stress at high engine speeds, so you won't be able to rev as high safely.

obviously valves takes abuse, i should've said "to a certain extent" for those who took what i said seriously
