My radio shuts off, the speedometer goes down to 0 mph and the maintenance req'd light goes on.
Everything turns back on seconds after it goes out.
The car continues to run but its starting to make me worry if shes just going to die one of these days.

These problems just started happening also... coincidently right after a CV joint replacement... doubt they are linked but does anyone know what the problem is?

Sounds like an ignition switch going bad. They were recalled, you should see if the recall is open on your car. These are classic ignition switch symptoms.
