Do you know how to port or what happens if you do it wrong?
From the sounds of it, you need to do a lot more reading before you start doing. When a baby comes into the world, everything is new to them and they don't become experts overnight. They have to crawl before they walk and walk before they run and it all takes time. Put in the time you need to learn to do it right and then start doing it.

I think there are a lot more things that would go wrong way before the head "cracks". porting a head is an art form. just because you have a die grinder and someone who used to build engines decades ago doenst mean you can port a head and you will gain horsepower. head design from a honda engine from the 90's is completely different than a chevy 350 (or what ever other american manufacture) from the 60's. the same porting ideas and practices on a 350 head in the 60's will most likely ruin a good honda head.

Porting a head incorrectly will lose power to begin with and if you really screw it up you might grind into a coolant passage, causing cracking etc. Like you said, you're familiar with motors because your grandfather use to race stock cars and build engines and therefore all his knowledge transfered genetically down the line into you when you were born. Look, my grandfather was a hell of a mechanic but I still learned everything I know, mostly on my own. At most I gained an aptitude for mechanics from him but I still had to put in the time and effort. It's clear to anyone that has a reasonable amout of mechanical knowledge here, that at best, you're at the early stages of knowledge. There's nothing wrong with that, every one of us started there....where you go from there is up to you. People will help you here if you show a willingness to do some searching and learning on your own before you post questions.
